What’s for Dinner?

Now that our lives are returning to normal, for the most part, we are getting back on a meal-planning track!

Monday- Penne with cheesy marinara sauce. Yes, the sauce was jarred but gimme a break. I just got back from vaca and all I had were my pantry staples. I always doctor up jarred sauce by adding herbs (I only had dried) and a tablespoon or two of cream cheese. Here is clever tip. Before you add the drained pasted to the sauce, toss it with some Parm cheese. This way the cheese sticks to the pasta, which helps the sauce to stick to the pasta better.

Tuesday- Orange sesame chicken with veggies over rice.

Wednesday- BBQ chicken pizza.

Thursday- Baked and breaded chicken cutlets topped with a tomato, mozzarella salad with balsamic dressing.

Friday- Rib eye steaks with twice-baked potatoes.

Saturday- Veggie lo-mein with soy, ginger, and garlic marinated grilled chicken.

Sunday- Grilled and marinated pork loin chops with garlic and herb roasted potatoes.
